You may re-evaluate your favorite pork recipe after trying these slow-cooked smothered chops, which gently braise in a mixture of beer and golden mushroom soup for hours to stay juicy all the way through. Creole seasoning, the same blend famously used in jambalaya and other Southern cuisine, is the secret that kicks the flavor up a notch. You can use boneless or bone-in chops for this recipe and get equally delicious results.

Ingredients

  • 3 pounds bone-in center cut pork chop (6 chops)
  • 2 teaspoons Creole seasoning
  • 1 can (10 1/2 ounces) Campbell’s® Condensed Golden Mushroom Soup
  • 1/2 cup beer
  • 1/4 cup all purpose flour
  • 2 tablespoons Dijon-style mustard
  • 1 tablespoon packed brown sugar
  • 3 cups sliced mushrooms (about 9 ounces)
  • 1 large onion, cut in half and sliced (about 1 cup)

Instructions

  • Tips

    • Time-Saving Tip: This dish may also be cooked on HIGH for 4 to 5 hours.
    • Easy Substitution Tip: You can substitute 2 1/2 pounds boneless center-cut pork chops for the bone-in pork chops.
  • Step 1

Season the pork with salt, pepper and the Creole seasoning.  Stir the soup, beer, flour, mustard and brown sugar in a 6-quart slow cooker until smooth.  Stir in the mushrooms and onion.  Add the pork and turn to coat.

  • Step 2

Cover and and cook on LOW for 6 to 7 hours or until the pork is done.  Season to taste.  Serve the pork mixture over hot cooked rice, if desired.
