Just add the potatoes, onion, bacon and chives and let the slow cooker do the rest. Stir in the cheese at the end and you're done! If you're really pressed for time (you can say you wanted the soup to look more rustic!), you can skip peeling the potatoes- it will still be delicious!
Step 1
Stir the bacon, onion, soup, milk, potatoes and 1/4 cup chives in a 6-quart slow cooker. Season with salt and pepper.
Step 2
Cover and cook on HIGH for 3 to 4 hours or until the potatoes are tender.
Step 3
Add the cheese and stir until the cheese is melted. Season to taste. Sprinkle with the remaining chives.
