Jill's Hash Brown Casserole is a gift to all the home cooks who have to bring a dish to a potluck or a brunch and need to use what's already on hand.  This recipe has basically no prep- you stir the ingredients in a baking dish, top with crushed cornflakes and bake!  Don't have any cornflakes?  Try a mixture of panko or crushed crackers with a little melted butter!  Whichever topping you choose, people just love this dish.  Condensed cream of mushroom soup bakes with hash browns, onion and cheese to make Jill's Hash Brown Casserole into a comfort food dish that tastes amazing!  Don't wait for a party!  It's so easy, you can make it anytime (breakfast for dinner, anyone?)!

Ingredients

  • 1 can (10.5 ounces) Campbell’s® Condensed Cream of Mushroom Soup or Cream of Chicken Soup
  • 8 ounces sour cream
  • 1/2 cup (1 stick) butter, melted
  • 1 package (30 ounces) frozen shredded hash brown potatoes (about 7 1/2 cups), thawed
  • 1 medium onion, chopped (about 1/2 cup)
  • 2 cups shredded Cheddar cheese  (about 8 ounces)
  • 1/2 cup crushed corn flakes

  • Tips

    • You can lighten up this recipe by making a few changes.  Try reducing the butter to 3 tablespoons, substituting reduced fat sour cream and 2% fat Cheddar cheese for the regular and reducing the cheese to 1 cup.  You can also use Campbell's® Condensed 98% Fat Free Cream of Mushroom or Cream of Chicken Soup. 
  • Step 1

    Heat the oven to 350°F.  While the oven is heating, stir the soup, sour cream, butter, potatoes, onion and cheese in a 13x9x2-inch baking dish. Season the mixture with salt and pepper. Top with the crushed corn flakes.

  • Step 2

    Bake for 45 minutes or until the mixture is hot and the corn flakes are lightly browned.
