How easy is this Easy Chicken Curry recipe? This non-boring chicken dish is almost too easy to make. The rich, spicy creamy curry sauce uses only two ingredients- curry powder and unsalted cream of mushroom soup. Add some additional on-hand ingredients, chicken thighs and sweet potatoes, and simmer, adding savory and sweet layers of flavor. Spinach is stirred in at the end to add more veggies and to make this one-pan meal look as good as it tastes. Easy Chicken Curry is great served over hot cooked rice or cauliflower rice. This easy recipe should definitely make it into the weeknight rotation!
Step 1
Season the chicken with salt and pepper. Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook until browned on both sides. Remove the chicken from the skillet.

Add the curry powder to the skillet and cook and stir for 30 seconds. Add the soup and milk and stir until smooth. Return the chicken to the skillet. Add the potatoes and heat to a boil. Reduce the heat to low. Cover and cook for 25 minutes or until the potatoes and chicken are done.
Step 3
Remove the skillet from the heat. Using 2 forks, shred the chicken. Return the skillet to the heat. Heat over medium heat and add the spinach, adding a handful at a time and stirring until wilted before adding more. Season to taste. Serve the mixture over hot cooked rice, if desired.
