Shepherd's Pie is basically a beefy pot pie with mashed potatoes on top instead of a crust, and mashed potatoes make everything better, don't they? And now that there are so many quick options for mashed potatoes, you can have this one-dish meal ready in 30 minutes (it bakes right in the skillet)! Just brown some ground beef and onion and add a few other pantry staples, including condensed cream of mushroom soup, which becomes a creamy sauce to hold the hearty filling together. Step 1
Heat the oven to 400°F. While the oven is heating, season the beef with salt and pepper. Cook the beef and onion in a 10-inch oven-proof skillet over medium-high heat until the beef is well browned, stirring often to separate meat. Pour off any fat.

Stir in the soup, ketchup and peas and carrots. Spread the mashed potatoes over the beef mixture.
Step 3
Bake for 15 minutes or until hot and the potatoes are lightly browned.
